Imagine that it's Monday and between my homework and helping kids with theirs I'm running behind, like usual, around dinner time. I really wanted to have some yummy breadsticks to go with the pasta we were going to have for dinner. My friend has this great recipe for breadsticks that we really like but I ended up not having enough time to let it rise... And that's when I remembered that I had a fantastic no rise roll recipe that I came across years ago. So thought to myself, why not try it with my recipe! And that's how this sheet of yummy, cheesy goodness came about. 30 minutes START to FINISH!! You really can't beat that.
The recipe for the rolls is pretty simple. This makes two sheet pans worth of breadsticks so cut it in half if you don't need that much. These breadsticks are a little dense but oh so good.
-- 30 Minute No Rise Rolls --
Original dough recipe came from this site - http://craftykin.blogspot.com/2008/10/back-as-promised-with-some-finished.html
2 ½ C warm water 6 Tbsp sugar 3 Tbsp yeast 2 Tbsp oil 6 C flour ( I like white but you can use whole wheat too) 2 tsp salt 1 tsp baking powder
Toppings for Cheesy Garlic Breadsticks
1/2 cup butter, melted
1 cup shredded cheese(any kind you like. I used a cheddar and mozzarella mix)
Salt - to taste
Garlic Power - to taste
Italian Spice Blend - to taste
Stir water, yeast, sugar and oil together. Leave for 5 minutes until it becomes frothy on top. Add flour, salt and baking powder. Mix well. I use my Kitchen-Aid and let it knead for 5 minuets. The dough will be sticky so I just flour up my hands and Knead it a little longer on the counter while adding flour until it's super sticky.
Then cut into two equal portions and then roll into rectangle to fit in sheet pans. Grab your sheet pans, making sure to spray a little Pam on their first. Place dough in sheets. You're going to want to score the dough down the middle and then in strips to form your bread sticks. Then take a basting brush, or something similar, and brush the melted butter equally between the two pans. Then sprinkle a little salt, garlic powder and Italian spices over both pans. Then sprinkle the cheese evenly between the two pans. You may find you need more cheese than 1 cup. It just all depends on how cheesy you want them to end up!
Finally bake at 425 degrees for 10-15 minutes. Check center of breadsticks for doneness around 10 minuets.
Let cool slightly, cut and then serve warm and gooey.
